The First Serious Super Bowl Wing Party (2018)

Every serious Super Bowl wing party starts with a stupid one. This is the story of mine.

The Party

Nassau County, Long Island. Roughly 15 people. Kickoff at 6:30. The plan was to have wings from every place worth trying within a 15-minute drive and let the crowd sort it out. What actually happened was 180 wings, four pizzas, and me making a spreadsheet at 2am the night before because I hadn't accounted for pickup timing.

The Vendors

Bells Kitchen & Smokehouse

Twelve smoked-and-fried wings plus a couple of brisket quesadillas. The smoke-then-fry technique is worth stealing — you get bark-adjacent flavour plus fry-shop crispness. Nothing else on the menu that night compared.

Toma-Tis

Ten jerk wings and ten Hennessey-glazed. The Hennessey wings were the surprise of the night — enough alcohol reduction to taste the caramel notes without the harshness. Jerk was solid but standard. Toma-Tis was the spot that made me start taking notes.

Ginger Flower

Twenty Thai wings, ten General Tso's. The Thai wings were the wildcard everyone remembered. Sweet chili with real depth, not the jammy syrup you get from most places attempting the flavour. General Tso's was fine but forgettable at a wing party — that sauce doesn't cling well enough to compete.

ATL Wings

Four orders of ten across their Spicy ATL dry rub, Red Hot Chef's Special, Toxic, and Cajun BBQ. Dry rub was the standout — a chain that actually gets dry seasoning right is rare. Toxic lived up to the name; only the two heat-seekers finished them.

Buffalo Wild Wings

Two large traditional orders, roughly 36 wings, across Mango Habanero, Caribbean Jerk, Asian Zing, Thai Ginger, Spicy Garlic, Hot, and Blazin'. BWW's role in a party like this is consistency. Everyone knows what they're getting. Not every order needs to be a discovery.

Papa John's + UFC

Papa John's twenty spicy wings as the pizza-shop backup. UFC delivered 40 wings, half spicy, half soy garlic. UFC's soy garlic is the sleeper play — sweet-savoury without being cloying, and holds up if you leave them out for 90 minutes (which you will).

Homemade Five-Spice Duck Wings

Twelve wings cooked at home. Duck wings are worth the trouble once. They are not worth the trouble twice, especially when your kitchen is already handling pickups for 12 other orders. Skip.

What Worked

  • Variety over volume. The best moments of the party were people trying a wing from a spot they'd never heard of. If I'd doubled up on BWW instead, nobody would remember any of it.
  • One centralised pickup. Having one person drive to three neighbourhood spots in one loop beat trying to coordinate three separate arrivals.
  • Ranking on the fly. A whiteboard with vendor names and a 1-10 scoring column turned eating into a game. Everyone had opinions by wing five.

What I'd Change

  • Fewer vendors. Ten was too many. Five or six would have hit the same variety at half the coordination cost.
  • Skip the homemade wings. The duck wings were fine. The two hours prepping them meant the table wasn't set until kickoff. Restaurant wings for a party. Homemade wings for a weeknight.
  • Order pizza last. The pizza sat next to the wings for the entire game and got maybe six slices eaten. Wing crowds don't want pizza. Learned this the hard way.

What to Steal

If you're throwing your first serious wing party, pick five vendors: two chains you trust for baseline consistency, two local spots for discovery, one wildcard cuisine (Korean, Thai, jerk). Aim for eight wings per guest. Skip the pizza. Set up a scoring whiteboard. That was the party 2018 should have been.

Nobody has ever said "we ordered too few wings."
